For the Tadka:

  • 2 tbsp Ghee
  • 1 tsp Cumin Seeds
  • 2-3 Garlic Cloves (finely chopped)
  • 1 Onion (finely chopped)
  • 1 Dry Red Chili
  • ¼ tsp Asafoetida (Hing)
  • ½ tsp Red Chili Powder
  • Fresh Coriander for garnish
  • ½ tsp Kasuri Methi (optional for aroma)
  • A piece of coal (for smoky flavor – optional but amazing)

👨‍🍳 Step-by-Step Instructions

Step 1: Pressure Cook the Dal
Rinse dal well. In a pressure cooker, combine dal, turmeric, salt, tomato, green chili, and water. Cook for 3–4 whistles until soft. Mash slightly.

Step 2: Prepare the Tadka
In a small pan, heat ghee. Add cumin seeds, dry red chili, and let them splutter. Add garlic and sauté till golden. Add onion and cook till light brown. Add red chili powder, hing, and kasuri methi. Stir well.

Step 3: Combine & Boil
Add the tadka into the cooked dal and simmer for 2–3 minutes to let the flavors blend.

Step 4: Add Smoky Dhaba Flavor (Optional but recommended)
Place a small bowl or piece of foil in the middle of your cooked dal. Heat a piece of coal until red hot, place it inside the bowl, pour a few drops of ghee over it, and cover the lid immediately. Let it smoke for 1–2 minutes. Remove the coal.

Serve hot with steamed rice, jeera rice, or butter naan. Add sliced onions and lemon on the side for that full dhaba experience.
